Moist Banana Nut Quick Bread Recipe

Banana bread is a great way to use bananas that have gone a little too far in the ripening stage. I keep them in the freezer to use in a variety of desserts.

3 ripe bananas
2 eggs
2 cups all-purpose unbleached flour
3/4 cup sugar
1 teaspoon salt
1 teaspoon baking soda
3/4 cup walnuts

Preheat oven to 350° Grease a loaf pan.

Mash the bananas in a large bowl, add the eggs and mix vigorously. Stir in the flour, sugar, salt and baking soda until well incorporated. Stir in the walnuts. Turn the batter into your loaf pan. Bake for 60 minutes. Cool the pan on a wire rack.

Yield: 1 loaf
