Quick and easy to prepare, this is an excellent appetizer dip recipe for crispy crackers.

1 16-ounce carton small curd cottage cheese
1/2 pound cream cheese, room temperature
1/4 pound bleu cheese, crumbled
1/2 cup butter, melted
3 tablespoons beef stock base
2 teaspoons good quality sweet paprika

Combine cottage cheese, cream cheese and bleu cheese in a large bowl and mix well. Blend butter, stock base and paprika in a separate bowl. Add the cheese mixture to the butter mixture, stirring until thoroughly combined. Place dip in an attractive serving bowl and refrigerate until well chilled.

Yield: 3 cups
