Raisins and capers team up with orange juice and cinnamon to fragrantly spice a fast-fix dish that’s sure to become a favorite in your home, too.

3 tablespoons vegetable oil
1 pound boneless, skinless chicken breasts
1 large onion
4 cloves garlic
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/2 cup orange juice
2 tablespoons raisins
2 tablespoons capers
Pepper, freshly ground
Parsley for garnish

Clean and cut the onion into thin slices. Clean and finely mince the garlic. Place the oil in a large frying pan and place the pan over high heat. When the oil is hot, add the chicken and cook 2 – 3 minutes on each side until lightly browned. Remove the chicken to a platter and loosely cover.

Reduce the heat to medium-low. Add the onion and garlic to the pan. Stirring frequently, cook for about 5 minutes, until the onions just begin to caramelize. Stir in cinnamon, cloves, orange juice raisings and drained capers. Return the chicken to the pan, cover and simmer over low heat for about 5 – 7 minutes, until completely cooked.

To serve, place the chicken on the serving platter and spoon the juices over the top. Sprinkle to taste with salt and pepper; garnish with parsley.
