Crabby Cream Puffs is an appetizer that stands out at every social gathering. Divinely delicious, they’re lovely served on a bed of fresh, dry kale.

1 cup water
1/2 cup butter
1 cup all-purpose flour
1/4 teaspoon salt
4 large eggs
3 6-ounce cans crab meat, drained
1 cup shredded sharp Cheddar cheese
1/2 cup ribbed, finely chopped celery
1/2 cup chopped black olives
1/2 cup mayonnaise
2 tablespoons finely chopped green onions
1 teaspoon grated lemon rind
1/4 teaspoon garlic powder

Bring water and butter to a boil over medium heat; reduce to low. Add flour and salt. Beat with a wooden spoon until mixture leaves sides of pan. Remove from heat and cool slightly. Add eggs, one at a time, beating until mixture is smooth.

Preheat oven to 425 °

Drop batter by teaspoonfuls onto lightly greased baking sheets. Bake for 10 minutes. Reduce oven heat to 325 ° and continue baking for 8 – 10 minutes or until batter puffs and turns golden.

Turn the oven off. To allow the steam to escape, pierce each puff on one side with a small sharp knife. Allow to remain in the warm oven for 10 minutes. Remove cream puffs to wire racks to cool completely. Slice the top one-third off of each puff and set aside.

Combine crab meat, Cheddar cheese, celery, olives, mayonnaise, onions, lemon rind and garlic powder. Spoon one tablespoon of the crab meat mixture into each puff; replace tops. Place puffs on un-greased baking sheets. Bake at 250° for 15 minutes or until thoroughly heated. Serve immediately.

Yield: 4 dozen cream puffs.
