Asparagus with sesame butter is a simple and delicious recipe for one of my favorite vegetables. I’m sometimes tempted to try to eat this short season vegetable at every meal…just haven’t worked out a very good recipe with oatmeal yet ;-)

2 pounds fresh asparagus
1 cup boiling water
1/2 teaspoon salt
1 tablespoon cornstarch
1/4 cup cold water
1/4 cup butter
3 tablespoon toasted sesame seeds

Wash the asparagus and remove the tough fibrous bottom portion. Place the asparagus in a large skillet; add boiling water and salt. Cook until tender, approximately 5 – 7 minutes. Remove the asparagus to a warmed serving platter, cover and keep warm.

Place 1/2 cup of the hot asparagus cooking liquid in a small saucepan over medium heat. Combine the cornstarch and cold water and stir into the reserved cooking liquid. Stir almost constantly until the sauce thickens; when it begins to bubble, cook for 1 minute longer. Remove the sauce from the heat and stir in the butter until melted. Spoon the sauce over the asparagus and sprinkle the toasted sesame seeds over the top.

Yield: 6 – 8 servings
