Warm and savory, these Mini Sausage Quiche Appetizers pack a lot of flavor in a little bite. Purchased pastry shells work wonderfully with this recipe, too!

Pastry shells:
2 cups all-purpose flour
1 teaspoon salt
1/3 cup butter, melted
1 egg yolk
6 tablespoons cold water

Combine flour and salt; add butter and egg yolk, stirring well. Sprinkle cold water, one tablespoon at a time, onto flour mixture. Blend with a fork until ingredients are moistened. Shape dough into a ball, cover and chill for about one hour.

Preheat oven to 400°

Divide chilled dough into 36 balls. Press balls into lightly greased miniature muffin cups, pushing the dough up the sides to form shells. Using a fork, prick the dough on the bottom and sides of each cup. Bake for 5 minutes. Remove from pans to cool on wire racks.

1/2 lb mild flavor ground pork sausage, cooked, drained and cooled
2 large eggs, beaten
1/2 cup milk
1-1/2 tablespoons butter, melted
1 cup shredded Cheddar cheese
Fresh parsley springs

Combine pork, eggs, milk, butter and cheddar cheese, blending well. Spoon into pastry shells or place filling in a baggie, cut off one corner and squeeze filling into shells. Bake filled shells at 350° for 20 – 25 minutes. Sprinkle with paprika and garnish with a pinch of fresh parsley.

Yield: 3 dozen.
