Shrimp Scampi can be prepared in about 20 minutes. Served with simply prepared vegetables and a fresh salad, you have a perfect fast meal after a long day.

1 cup olive oil
2 pounds large shrimp, peeled and de-veined
1 cup all-purpose flour
1-1/2 cups dry white wine
1 tablespoon Worcestershire sauce
5 cloves garlic, minced
2 lemons, slice ½ of one for garnish and set aside, juice the remainder
1/2 cup chicken stock
1/2 cup butter, diced
Salt and pepper to taste
2 tablespoons chopped fresh parsley

In a deep skillet, heat the olive oil over medium-high heat. Lightly coat the shrimp in flour. In batches, sauté shrimp in oil until golden brown; each batch should take approximately 2 minutes. Drain on paper towels.

Discard the oil and add the wine, Worcestershire sauce, garlic, lemon juice, and chicken broth to the skillet. Cook for approximately 5 minutes over medium-high heat until liquid has reduced by half; lower heat to medium. Stir in butter, season with salt and pepper to taste. Add shrimp cook for about a minute, to heat through.

Garnish with a slice or two of lemon, sprinkle with parsley and serve.

A note about cooking with wine. “Cooking wine” from the food isle is pretty nasty stuff. You should enjoy the flavor of the wine added to recipes. Wine for cooking doesn’t need to be top shelf or expensive, just decent.
